These cheesy bacon and sausage egg bite muffins are the best way to start your morning and only 2 WW smartpoints each!
In a large microwave safe mixing bowl, place your 3 oz of reduced fat cream cheese and microwave for 45 seconds (or until melted)
Cook your bacon (or use Ready Cooked bacon) and crumble into pieces. Set aside.
Crack the eggs into the bowl and mix the eggs and cream cheese together.
Add in the self rising flour and continue mixing.
Add in the shredded cheddar cheese, sausage crumbles and bacon.
Stir everything together.
In a 12 count muffin tin, pour the egg mixture evenly into each muffin cup (note: I use a silicon muffin tin for easy removal after baking. If you do not have a silicon muffin tin, make sure to spray with cooking spray before pouring.)
Bake at 350 degrees for 25 minutes, or until firm.
This recipe makes 12 muffins at 2 WW Smartpoints each, based on the ingredients that I use. If you use different ingredients, make sure to alter the points accordingly.
