This lightened up one pan beef stroganoff is so easy and tastes so indulgent, you wouldn’t even know it’s healthy. Not to mention, makes for the easiest cleanup!

Ingredients

  • 16 ounces ground beef lean, 96% lean
  • 8 ounces rotini noodles Fiber Gourmet Light Rotini
  • 1 can cream of mushroom condensed soup
  • 1 can beef broth
  • 2 tsp garlic minced
  • 1 cup white mushrooms sliced
  • 1.5 tsp horseradish
  • 2 tbsp greek yogurt 0%
  • 1 tbsp flour
  • pinch salt and pepper
  • pinch parsley fresh

Instructions

  1. Heat a large pan with cooking spray on medium heat and add 2 tsp of minced garlic and 1 cup of sliced mushrooms. Cook until the mushrooms start to brown. 

  2. Add ground beef and cook until the beef is almost fully cooked through.

  3. Add cream of mushroom condensed soup and beef broth. Turn heat to high and bring to a boil.

  4. Once the soup is boiling, turn to medium low heat, add rotini pasta and cover with a lid. Let cook for 15 minutes, or until the pasta is cooked through and most of the liquid has been absorbed.

  5. Add yogurt, horseradish, flour, salt & pepper and stir until everything is mixed thoroughly.

  6. Top with fresh parsley.

Recipe Notes

This recipe makes 3 servings at 1 ½ cups per serving and is 10 smartpoints per serving on all three myWW plans, however can be easily swapped for whole wheat pasta on the purple plan to make it 6 points per serving.
