Banana bread is having its moment in the spotlight right now. At a time when we are all stuck at home, staying safe and keeping ourselves and our loved ones healthy, we are turning to banana bread to keep us sane. Why? I honestly have no idea. My guess is that it’s easy, comforting, simple to make and uses ingredients that are already found in the pantry. This protein packed Fruity Pebbles banana bread will be loved by the whole family and is sure to add some joy to your life.
What you will need for this fruity pebbles banana bread
- 1 ⅓ cup protein pancake mix (I use Kodiak Cakes mix)
- 1 cup Fruity Pebbles cereal
- 3 bananas
- 1 cup water
- ½ cup egg whites
The base of this protein packed Fruity Pebbles banana bread is my easy protein packed banana bread, which you can find the recipe for here. One of my first recipes on this website, it has always been a staple of mine when I want a good slice of comfort food. I always love topping my banana bread with peanut butter, jam, butter or any other goodness. This Fruity Pebbles bread doesn’t need any additional toppings because, seriously, could it get any better than cereal on your bread?!
How to make this bread
- Mash bananas into a mixing bowl.
- Pour egg whites and water into the mashed bananas and mix.
- Add in pancake mix and and ½ cup of Fruit Pebbles (set aside the remaining ½ cup of Fruit Pebbles to pour on top of loaf).
- Pour batter into a parchment paper lined loaf pan.
- Sprinkle the remaining ½ cup of Fruity Pebbles on top.
- Bake for 25 minutes at 400 degrees.
Can I save this bread for later?
This bread can absolutely be saved for later and has a shelf life that makes it the best make ahead breakfast (or dessert!). It can be saved for 1-2 days at room temperature or in the refrigerator for up to a week. Reheat it in the oven for warm, crispy yumminess!

Ingredients
- 1.3 cup Kodiak Cakes waffle mix
- 1 cup Fruity Pebbles
- 1/2 cup egg whites
- 3 bananas
- 1 cup water
Instructions
Mash bananas into a mixing bowl.
Pour egg whites and water into the mashed bananas and mix.
Add in pancake mix and and ½ cup of Fruit Pebbles (set aside the remaining ½ cup of Fruit Pebbles to pour on top of loaf).
Pour batter into a parchment paper lined loaf pan.
Sprinkle the remaining ½ cup of Fruity Pebbles on top.
Bake for 25 minutes at 400 degrees.
