Give me a donut, cookie, cinnamon roll or cupcake over a pint of ice cream ANY DAY. Unfortunately, making two slices of cinnamon sugar bread every night for dessert is also what made me gain 60 pounds in 4 months. Sooo, I can’t do that anymore. I absolutely need dessert every night. It’s a must. I also don’t keep dessert in my house for fear of eating it all in one sitting. Que my nightly problem of needing something sweet but not having anything on hand to satisfy my craving.
One night, during my nightly ritual of standing in my kitchen deciding what I want for dessert and hoping a sprinkle donut will magically appear, I decided to combine a banana, an egg and some pancake mix and see what happens. I love the good old ‘banana + egg pancakes’ so why not turn it into a loaf of sorts that I can eat on the couch while watching TV?
As I grabbed the box of pancake mix from the cupboard, I got the skeptical question from my dear husband: “We just had dinner. Are you making pancakes?” My quick answer “Yes, but I’m going to cook it in the shape of a cake so its technically dessert.” LOGICAL.
A few ingredients and 40 minutes later, my beautiful banana “pancake” bread was born.
This banana bread recipe is so easy and and versatile! Make it as bread or easily turn it into muffins. Bake it plain or follow my lead and mix in chocolate, nuts (hello super simple banana nut bread!) and oats. Eat it naked or top with coconut flakes, jam, nut butter, berries or syrup…the possibilities are endless. You want this baby in your life. Trust.
Easy Protein Packed Banana Bread

- 4 eggs
- 3 bananas
- 1 cup pancake mix I use either Kodiak Cakes or Birch Benders protein mix
- 1/3 cup mini chocolate chips
- 1/3 cup quick oats
- 1 scoop collagen peptides I use Vital Proteins brand
- 1 cup water
mash bananas into mixing bow
crack eggs into mashed bananas and mix
add in dry ingredients & chocolate chips
pour batter into a loaf pan
bake for 20 minutes at 400 degrees
