We all have a problem child, and for me it’s lunches. Breakfasts are always a quick coffee and plate of scrambled eggs. Dinner is when I love to experiment and be creative. Lunch time is hard, though. Especially when you’re a working woman who has one short hour to prep, cook, eat, clean, take out the dog and get back to the office. I am often stumped for lunches and end up eating the same old turkey sandwich. Not anymore, though, thanks to this meal prep brown rice and bell pepper bowl!
What you will need for this brown rice and bell pepper bowl
- 1 cup brown rice (I used frozen organic brown rice from Trader Joes – easily warmed up in the microwave)
- ½ cup black beans
- ¼ cup green pepper, diced
- ¼ cup red pepper, diced
- ¼ cup cucumber, diced
- 3 ounces fat free feta cheese (found at Trader Joes)
- 2 tablespoons feta dill dressing (OPA brand)
Making this bowl is as easy as can be and the perfect make-ahead lunch. Just heat up the brown rice and black beans in the microwave, chopping your cucumber and peppers while the rice and beans are cooking, and then toss everything together in a large bowl. Mix in your feta cheese and drizzle with feta dill dressing. This healthy lunch can be made ahead of time and stored in the refrigerator. It is equally delicious both cold, or made quickly and eaten warm. There is no losing with this healthy brown rice bowl!

Brown Rice and Bell Pepper Bowl
This brown rice and bell pepper bowl is vegetarian, uses clean ingredients, is easy to meal prep and is packed with flavor!
Ingredients
- 1 cup Organic Brown Rice Trader Joes, Frozen
- 1/2 cup Black Beans
- 1/4 cup Green Bell Pepper chopped
- 1/4 cup Red Bell Pepper chopped
- 1/4 cup Cucumber chopped
- 3 oz Fat Free Feta Cheese Trader Joes
- 2 tbsp Feta Dill Dressing OPA Brand
Instructions
Heat up the brown rice for 3 minutes, per the instructions on the bag.
While the rice is cooking, chop up your cucumber and peppers.
Once the rice is done cooking, pour 1/2 cup black beans into a large microwave safe bowl and heat up for 30 seconds, or until the beans are heated to your desired temperature.
Once the beans are done cooking, add 1 cup of your cooked rice into the bowl, and throw in the chopped vegetables. Toss everything together.
Mix in your feta cheese and drizzle with feta dill dressing.
Recipe Notes
This brown rice bowl is 10 WW smartpoints on the green plan, 8 smartpoints on the blue plan and 2 smartpoints on the purple plan with the ingredients that I use. If you use different ingredients, make sure to adjust the point count accordingly.
