In my opinion, the weekend is something to celebrate. We work hard all week. We have early alarm times, responsibilities, we are usually running out the door & have limited breakfast time. There is no better way to celebrate a Saturday morning at home than with a giant stack of pancakes, am I right? You will come to learn that I am a SUCKER for pancakes. They always have, and always will be, a weakness of mine. When I was younger I used to call them “nakers” and would ask my mom to make them every weekend. Regular, chocolate chip, berry…I don’t care. I want them all.
There are very few things I was absolutely unwilling to give up when I first started my path towards better health. Breakfast sweets was one of them (I mean, hello..I only have a few posts up on this blog so far and two of them are already sweet breakfast yummies. It is because of my love for all things sweet in the morning, I am always searching for ways to change up my pancake recipes and add a healthy twist to them. These apple slice pancakes give me all the flavor I crave with some added crunch, nutrients and flavor.
Pro Tip: If you want to be adventurous, add some cinnamon and get ready for the perfect Fall breakfast.

Apple Slice Panckes

Ingredients
- 1 apple
- 1 cup pancake mix I sue Kodiack Cake or Birch Benders Protein Mix
- 1 cup water
- 2 tbsp maple syrup
Instructions
Core your apple
Slice the cored apple into thin disk shaped pieces
Mix together your pancake batter (for my Kodiak Cake or Birch Benders Protein mix, I use 1 cup mix to 1 cup water. If you are using a different pancake mix, follow the necessary directions for your batter)
Heat up a frying pan and spray with cooking spray
Dip your apple slices into the pancake batter
Place dipped slices onto your frying pan
Flip halfway (just like you would a normal pancake)
Stack high, drizzle with syrup and ENJOY
