Carbs are healthy if you stuff them with fruit, right? That’s definitely what I always tell myself when I finish off a plate of these apple slice pancakes!

Ingredients

  • 1 apple
  • 1 cup pancake mix I sue Kodiack Cake or Birch Benders Protein Mix
  • 1 cup water
  • 2 tbsp maple syrup

Instructions

  1. Core your apple

  2. Slice the cored apple into thin disk shaped pieces

  3. Mix together your pancake batter (for my Kodiak Cake or Birch Benders Protein mix, I use 1 cup mix to 1 cup water. If you are using a different pancake mix, follow the necessary directions for your batter)

  4. Heat up a frying pan and spray with cooking spray

  5. Dip your apple slices into the pancake batter

  6. Place dipped slices onto your frying pan

  7. Flip halfway (just like you would a normal pancake)

  8. Stack high, drizzle with syrup and ENJOY
