This brown rice and bell pepper bowl is vegetarian, uses clean ingredients, is easy to meal prep and is packed with flavor!
Heat up the brown rice for 3 minutes, per the instructions on the bag.
While the rice is cooking, chop up your cucumber and peppers.
Once the rice is done cooking, pour 1/2 cup black beans into a large microwave safe bowl and heat up for 30 seconds, or until the beans are heated to your desired temperature.
Once the beans are done cooking, add 1 cup of your cooked rice into the bowl, and throw in the chopped vegetables. Toss everything together.
Mix in your feta cheese and drizzle with feta dill dressing.
This brown rice bowl is 10 WW smartpoints on the green plan, 8 smartpoints on the blue plan and 2 smartpoints on the purple plan with the ingredients that I use. If you use different ingredients, make sure to adjust the point count accordingly.
