Eat them plain or make a loaded breakfast sandwich. These 2 smartpoint cheesy sausage biscuits are my new obsession and I promise they will be yours too!
Mix nonfat Greek yogurt, self rising flour, club soda, baking powder and salt. NOTE: it will be incredibly sticky. Like, ruin the entire batch because 80% of it will stick to your hands sticky. I use my Kitchenaid mixer to do the mixing for me. If you don’t have access to a mixer, flour your hands and mix very slowly.
Add in shredded cheese and sausage crumbles.
After all ingredients are mixed, place the dough on a silicon baking mat and roll out until dough is about ½ inch thick. If you do not have a silicon baking bat, parchment paper will also work.
With a round cookie cutter, or an upside glass, cut the dough into even round shapes. Dough should make 15 biscuits.
Microwave butter for 20-30 seconds, until melted.
With a baking brush, brush the top of each biscuit with butter.
Bake in the oven for 25 minutes at 375, until golden brown.
This recipe makes 15 biscuits at 2 smartpoints each, based on the ingredients that I use. If you use different ingredients, make sure to adjust your points accordingly.
