This 4 smartpoint WW Greek Chicken Meal Prep Bowl is the perfect lunch for staying on track and crushing goals!
Pour 1/3 cup of chickpeas from a can onto parchment paper, sprinkle with salt and pepper and bake at 375 for 40 minutes, taking out and shaking halfway through.
Cook a boneless, skinless chicken breast on the stovetop in a cast iron skillet for 3 minutes on each side, until it is browned and crispy on each side. Then pop the skillet in the oven 20 minutes at 400 degrees.
Slice Persian Cucumber into small pieces.
Mix 1/3 cup 0% Greek Yogurt, cucumber pieces, lemon juice, dill, salt and pepper in a bowl to create a Tzatziki sauce.
Heat 1/2 cup Trader Joes frozen organic brown rice and 1/3 cup steamed lentils in the microwave, according to label directions.
Remove chickpeas and chicken from the oven.
Dice up the chicken
Put everything into your meal prep container, leaving the tzatziki sauce and hummus separate. *you want to leave the sauce and the hummus separate so that when you heat everything in the microwave to eat, the hummus and sauce doesn't heat up*
Put in fridge and enjoy later in the week!
