Incredibly simple and full of flavor, these loaded caesar salad egg roll bowls are the perfect appetizer for a intimate family dinner or your next dinner party!
Preheat oven to 400 degrees.
Spray a large muffin tin with cooking spray.
Stuff each cup with an egg roll wrapper.
Press the bottom of each wrapper into the mold to create a small cup/bowl shape. (the sides will fold in on themselves. That is okay.
Bake at 400 degrees for 15-20 minutes, or until golden brown.
While your egg roll bowls are cooking, grill up your chicken breasts.
Chop up lettuce and hard boiled eggs.
Toss lettuce and chopped eggs with 4 tbsp caesar salad dressing.
Once the chicken is doing cooking, cut into small pieces and toss into your salad.
Remove egg roll bowls from the oven and let cool.
Slide each bowl out of the muffin tin molds and pack high with your tossed salad.
