This loaded avocado bacon cheeseburger salad will leave you never needing the classic fast food “Burger & Fries” again!
Do you ever want the bacon cheeseburger with avocado, the bread and the fries but don’t want the break your smartpoint bank, and possibly go into negative weeklies (which I have definitely done too many times to count)? This loaded avocado bacon cheese burger salad is your answer!
I am not ashamed to say I love a good fast food meal every now and again. Truly deep down, don’t we all? I even have my healthy replica of the Burger King classic chicken sandwich that you can find here. If you were a 90’s kid, you can’t tell me you didn’t spend way too much time eating happy meals in hopes of collecting all 101 dalmatian toys or all of the mini beanie babies from good old Mccy D’s.
The Big Mac is a classic and for good reason. But by the time we order the burger and the fries (Come on, we obviously have to always get the fries), we are looking at a 24-33 point meal. Which brings me to this salad. This loaded avocado bacon cheeseburger salad is 16 smartpoints for the entire bowl. I know that sounds like a steep point count for a lot of you out there, but this seriously tastes like the SPLURGE meal. It also includes the “fries” and adds bacon and avocado (you don’t find that on a Big Mac, do you?)
What you will need for this loaded bacon cheeseburger salad
- 6 oz lean ground beef (or ground turkey, if you prefer)
- 1 ½ chopped romaine lettuce
- 1 ½ slices center cut bacon (I use Oscar Mayer brand)
- 1 medium sized russet potato, cut into small pieces and cooked on the stovetop
- ½ slice rye bread
- 27 g avocado
- ½ oz shredded cheddar cheese, reduced fat
- 2 tbsp thousand island dressing (I use Kroger brand – it is the lowest in points without being fat free)
- Sandwich pickles
How to make this salad
- Start by cutting your russet potato into small pieces and cooking on a stovetop on medium heat with some cooking spray. I usually cover my pan with a lid to soften the potatoes faster. Note: potatoes will need about 20 minutes to cook, which is why this is the first step.
- After the potatoes have been cooking for about 10 minutes, start cooking your ground meat in a separate pan.
- While the potatoes and meat are cooking, you can start prepping all of your other ingredients. Chop up your lettuce, cut up the avocado into small pieces, portion out your shredded cheese and chop ½ a slice of rye bread into small squares. Set everything aside.
- After your meat is done cooking, put aside in a bowl and start cooking your bacon.
- After the bacon is nice and crispy, chop into small pieces and set aside.
- In the bacon grease, cook your diced up pieces of rye bread and make “croutons”.
- By the time all of these steps are done, your potatoes should be perfectly cooked.
- Now you can start putting together your salad!
- Fill a bowl with lettuce and top with 6 oz of ground beef, 3 ¼ oz of potatoes, 2 ½ slices of bacon crumbles, your rye bread “croutons”, 27 grams of avocado, ½ oz of reduced fat shredded cheddar cheese, 2 tbsp of thousand island dressing & pickles.
