This quick and easy instant pot apple crisp serves up all the good fall vibes, with just a portion of the calories and is sure to be a new favorite!
It’s only August 2nd, and I am already dreaming of Fall and the delicious treats that come with it. Sure, apple crisps can be enjoyed all year long, but something about this instant pot apple crisp recipe just makes me want to bundle up into sweats and lay by a fire.
We all say we love apple pies, but we also all secretly know what we actually love: the crumble crust on top! Cinnamon, nutmeg, brown sugar, butter…does it really get any better? After licking our bowls of this dessert clean the other night, my husband said it all “that crumble part is THE BEST!”
Luckily, the base of this dessert is apples, water and cinnamon (hello ZERO POINT FOODS!) so we are able to use some points up on all the good stuff: the crumbles!
What you will need to make this dessert
- 8 medium apples
- 1 cup water
- 2 tbsp lemon juice
- ½ tsp nutmeg
- 2 tsp cinnamon
- 1 tsp vanilla extract
- ½ cup almond flour
- ½ cup Truvia brown sugar natural sweetener
- ½ cup I Can’t Believe It’s Not Butter Spread (or any butter alternative)
- 1 cup rolled oats
How to make this easy instant pot apple crisp
- Cut your apples into small cubes. I start by coring my apples and then cutting them in half. Then I continue cutting each piece in half, until eat apple has made about 10 small pieces.
- Once all of the apples have been cut up, throw them into your Instant Pot.
- Add in 2 tsp of cinnamon, ½ tsp of nutmeg, 1 tsp vanilla extract, 2tsbp lemon juice and 1 cup of water. Stir everything together so the apples get nice and coated.
- Close the Instant Pot and cook on high pressure for 10 minutes.
- While the apples are cooking, combine ½ cup almond flour, ½ cup brown sugar, 1 cup rolled oats and ½ cup butter (melted) in a bowl. Stir until mixed thoroughly.
- After 10 minutes, the Instant Pot will beep. Immediately vent and open the lid.
- Add in your oats mixture to the apples in the Instant Pot and stir.
- Reseal the lid and press saute mode. Cook for 5 minutes.
- After 5 minutes, vent and open the lid.
- Serve by itself or with vanilla ice cream on top!
