Did anyone else look forward to the teriyaki chicken bowl from the Chinese Food booth at their elementary school festival every year? Just me? Okay, how about the teriyaki chicken bowl from Jack in the Box? Still just me?
I so often load my teriyaki bowls up with all the stir fry works. And although a giant bowl of various veggies/spices/wontons & noodles is one of my favorites, sometimes the simple & classic ‘rice, chicken and broccoli’ bowl is just too good.
This homemade copycat Jack in the Box teriyaki chicken bowl is just as good as the fast food version but less the calories and packed with the most tender white meat shredded chicken. The key to getting the most flavorful and moist shredded chicken is poaching. If you have never tried poaching chicken, it is incredibly easy and a definite must try!
How to make poached chicken
- Place chicken breasts in a shallow pan.
- Pour in enough water to cover chicken about 1/2 way.
- Bring water to a boil.
- Once water is boiling, reduce heat and simmer uncovered for 5 minutes.
- Turn off heat, cover and rest for 15 minutes.
- Remove chicken from pan and shred.

Easy Teriyaki Chicken Rice Bowl
This easy teriyaki chicken rice bowl is a simple and healthy twist on the classic that we all grew up with!
Ingredients
- 2 chicken breast boneless
- 3 cups water
- 1 head broccoli
- 2 cups broccoli
- 1/4 cup teriyaki sauce
- 2 cups brown rice Trader Joes frozen organic brown rice
Instructions
Cut up head of broccoli into small flowerets.
Steam broccoli 8-10 minutes, or until tender.
Place boneless chicken breasts in a shallow pan.
Pour in 3 cups of water (enough to cover the chicken about 1/2 way.
Bring water to a boil.
Once water is boiling, reduce heat and summer uncovered for 5 minutes.
Turn off heat, cover and rest for 15 minutes.
While chicken is cooking, heat up your brown rice in the microwave, following directions on the box. I use Trader Joes brand frozen organic brown rice. If you are using different rice, follow the necessary directions.
Once chicken has been cooking for 15 minutes, remove from the water and shred.
Toss shredded chicken with 1/4 cup of teriyaki sauce.
Combine rice, steamed broccoli and teriyaki chicken in bowl.
Optional: top with chili sauce & sesame seeds for extra flavor.
