I have seen different variations of cauliflower oatmeal floating around the Instagram world for awhile now. I always thought it was 1) definitely too good to be true 2) probably tasted very weird and 3) seemed like too much work. No matter how many accounts I saw that claimed it was the best thing since sliced bread, I just couldn’t bring myself to try it. You can never truly trust these healthy food Instagram accounts, right? I mean, half the times they are telling me “I can’t even tell the difference between cauli rice and regular rice!!!” Yeah…right…
I finally decided to try cauliflower oatmeal after seeing a fellow WW rave about it. If you haven’t check out @prettyontrack on Instagram, definitely check her out! She said it was good, so I finally caved and decided to see what all the hype was about.
Please note a few very important things before you make cauliflower oatmeal:
- Most importantly, and I cannot stress this enough, adding sweetener is KEY. It will taste like cauliflower and not be good without some sort of sweetness.
- The way I make it does, in fact, contain oats. So although it is not no carb, it is still low carb and tastes a hell of alot better.
How to make cauliflower oatmeal
Bring ½ cup water and ½ cup unsweetened almond milk to a boil.
Add in ½ cup frozen cauliflower rice and cook until tender (usually about 2 minutes).
Add ¼ cup of oats and 2tbsp egg whites and stir for about 5-10 minutes, or until cooked to your desired oatmeal consistency.
Add in ½ tsp cinnamon, 1 ½ tsp agave, ½ tsp vanilla extract and 1 tsp chia seeds (all optional – but, again, you will definitely want to add in some sort of sweetener).
Pour into a bowl and top with an toppings you want!

- 1/2 cup almond milk unsweetened
- 1/2 cup riced cauliflower frozen
- 1/4 cup old fashion oats
- 2 tbsp egg whites
- 1/2 tsp cinnamon
- 1.5 tsp agave
- 1/2 tsp vanilla extract
- 1 tsp chia seeds
Instructions
