Just like Oprah, I love bread. Sandwiches, pizza, bagels or just a plain loaf with some butter. I don’t discriminate; I love it all. I rarely find myself truly enjoying a substitution for good ol’ carbs, but did you know that collard greens are used to make the most incredible wraps so you don’t need to waste calories on tortillas? OKAY maybe that’s not their main reason for existence, but it’s up there on my list.
These chicken avocado collard wraps are SO FLAVORFUL (hello horseradish), take just a few minutes to put together and will leave you wondering why you haven’t been using collard greens for wraps this whole time.
Pro tip: if you cut them into pinwheels they are just more fun to eat. Even your kids will love them!

Chicken Avocado Collard Wraps

Ingredients
- 4 ounces Rotisserie Chicken Breast shredded
- 2 ounces avocado mashed
- 2 tbsp hummus
- 1 ounce cheddar cheese shredded
- 2 tsp horesradish
- 3 pieces collard greens
Instructions
Slice your collard lengthwise, along the stem. set aside
Shred up your chicken
Mash up your avocado
Take one collard at a time and roll your chicken, hummus, avocado, cheese & horseradish up in a spiral.
Cut into pieces
*Depending on the size of the collard, I am usually able to make 3 good sized "pinwheels" out of each roll.
