I went back and forth and debated putting this post up on the blog. I am a perfectionist when it comes to my photos, and this bowl of cheesy savory cauliflower oats was just not being photogenic this morning. But at the end of the day, I want to always share good recipes with you guys and THIS IS OFFICIALLY GOING TO THE TOP OF MY BREAKFAST LIST. So why not share it with you, despite the not-so-beautiful-photos?
I have fallen in love with cauliflower oatmeal. Weird, I know. But it is truly delicious and a great way to sneak in some veggies with my breakfast. If you haven’t tried my cauliflower oatmeal, you can check it out here.
It dawned on me one morning – if sweet banana and nut butter topped cauli oatmeal is so good, imagine how good savory cauli oatmeal with eggs and avocado would be?! And voila: this baby was born.
This oatmeal is full of all of my favorite breakfast goodies: oats, potatoes, cheese, avocado & the most perfect poached eggs. Does it really get any better than that??
How to make the perfect microwave poached egg
- Fill a mug with ½ cup of water
- Crack egg into the mug
- Place a small plate on top of the mug
- Microwave for 40-60 seconds
- Remove the egg from the mug with a slotted spoon

Cheesy Savory Cauliflower Oatmeal
This cheesy savory cauliflower oatmeal is packed with protein, healthy, easy to make and so delicious you won’t even know you’re eating a bowl of vegetables for breakfast!
Ingredients
- 1/2 cup water
- 1/2 cup almond milk unsweetened
- 1/2 cup cauliflower rice frozen
- 1/2 cup shredded hash browns frozen, Ore Ida brand
- 1/4 cup old fashion oats
- 2 tbsp egg whites
- 1 oz mozzrella cheese shredded, Trader Joes Lite
- pinch salt & pepper
- 45 grams avocado
- 2 eggs
Instructions
Bring ½ cup water and ½ cup unsweetened almond milk to a boil.
Add in ½ cup frozen cauliflower rice and ½ cup frozen hash browns and cook until tender (usually about 2 minutes).
Add ¼ cup of oats and 2tbsp egg whites and stir for about 5-10 minutes, or until cooked to your desired oatmeal consistency.
Toss in 1 ounce shredded mozzarella cheese and stir.
Add salt & pepper to taste.
Pour into a bowl.
Fill a mug with ½ cup of water.
Crack egg into the mug.
Place a small plate on top of the mug.
Microwave for 40-60 seconds.
Remove the egg from the mug with a slotted spoon.
Place egg onto oatmeal.
Top with avocado, hot sauce or any other desired topping.
