These cheesy bacon and sausage egg bite muffins are the best way to start your morning and only 2 WW smartpoints each!
Move over Starbucks egg white bites, these cheesy bacon and sausage egg bite muffins are the newest egg bite in town and won’t break the point bank! These egg bite muffins have it all: bacon, sausage, egg, cheese..does it really get any better?
What you will need for these egg bite muffins:
- 8 eggs
- 3 oz reduced fat cream cheese
- ⅓ cup self rising flour
- 1 ¼ oz reduced fat shredded cheddar cheese
- ¾ cup jimmy dean fully cooked turkey sausage crumbles
- 4 slices bacon
These babies can be kept in the refrigerator and reheated in the microwave for easy breakfasts on hectic mornings. Pack them in your husbands work bag on his way out the door, and give them to your kids while they are getting ready for school. Or, if you’re like me, settle down with a nice cup of coffee and enjoy every single bite. These egg bite muffins are perfect for every kind of morning and something the whole family will enjoy.
How to make these cheesy bacon and sausage egg bite muffins:
- In a large microwave safe mixing bowl, place your 3 oz of reduced fat cream cheese and microwave for 45 seconds (or until melted)
- Cook your bacon (or use Ready Cooked bacon) and crumble into pieces. Set aside.
- Crack the eggs into the bowl and mix the eggs and cream cheese together.
- Add in the self rising flour and continue mixing.
- Add in the shredded cheddar cheese, sausage crumbles and bacon.
- Stir everything together.
- In a 12 count muffin tin, pour the egg mixture evenly into each muffin cup (note: I use a silicon muffin tin for easy removal after baking. If you do not have a silicon muffin tin, make sure to spray with cooking spray before pouring. Here is the silicon muffin tin that I have from Amazon)
- Bake at 350 degrees for 25 minutes, or until firm.
