Breakfast is, hands down, my favorite meal of the day. Eggs, cheese, breakfast meats, bread – I just love it all. Combine all those ingredients together into a 2 smartpoint cheesy sausage biscuit? It’s even better.
What you will need for these homemade biscuits
- 2 cups self rising flour
- ½ cup 0% fage greek yogurt
- ½ cup club soda
- ½ tsp salt
- 1 ½ tsp baking powder
- 2 ounces reduced fat shredded cheddar cheese
- ¾ cup Jimmy Dean fully cooked turkey sausage crumbles
- 2 tsp I Can’t Believe It’s Not Butter original spread
This recipe is a healthy twist on the classic two ingredient dough, but with half the amount of yogurt and added baking powder and club soda, these babies are fluffy and full of all your favorite biscuit goodness.
How to make these 2 smartpoint cheesy sausage biscuits
- Mix nonfat Greek yogurt, self rising flour, club soda, baking powder and salt. NOTE: it will be incredibly sticky. Like, ruin the entire batch because 80% of it will stick to your hands sticky. I use my Kitchenaid mixer to do the mixing for me. If you don’t have access to a mixer, flour your hands and mix very slowly.
- Add in shredded cheese and sausage crumbles.
- After all ingredients are mixed, place the dough on a silicon baking mat and roll out until dough is about ½ inch thick. If you do not have a silicon baking bat, parchment paper will also work.
- With a round cookie cutter, or an upside glass, cut the dough into even round shapes. Dough should make 15 biscuits.
- Microwave butter for 20-30 seconds, until melted.
- With a baking brush, brush the top of each biscuit with butter.
- Bake in the oven for 25 minutes at 375, until golden brown.
These biscuits come to 2 smartpoints each and can be kept in a air tight container for a 2-3 days, if you and the family don’t get around to eating them all first.
