These 2 smartpoint cheesy pepperoni breadsticks are so easy to make, and fun to eat, they may quickly replace pizza for your family.
I love a good breadstick. Any time they are available as an option on a menu, I’m in. It probably has something to do with the fact that I just love bread? Make them even better and add cheese and marinara sauce to dip into? Yes please.
In my never-ending mission to prove that anytime can be made from two ingredient dough, these 2 smartpoint cheesy pepperoni breadsticks were created. If you haven’t already discovered my love for two ingredient dough, you can find it all over this blog. For instance, you can find my two ingredient bread bowls with chili here.
How to make these breadsticks
- Combine 1.5 cups of nonfat Greek yogurt and 1.5 cups self rising flour.
- Mix self-rising flour and yogurt together. NOTE: it will be incredibly sticky. Like, ruin the entire batch because 80% of it will stick to your hands sticky. I use my Kitchenaid mixer to do the mixing for me. If you don’t have access to a mixer, flour your hands and mix very slowly.
- Once flour and yogurt have created a dough-like consistency, toss in 2 ounces shredded mozzarella cheese (I use Trader Joe’s lite mozzarella for 2 WW smartpoints) and ⅔ cup shredded parmesan (I use Organic Valley brand for 2 WW smartpoints each).
- Chop up 15 turkey pepperoni into small pieces and add into the cheesy dough.
- Roll out the cheesy dough mixture into a piece of parchment paper and form into a large rectangle.
- Top with spray oil (I use Ghee spray for extra crisp) and garlic salt.
- Bake at 400 degrees for 20 minutes.
- After baking, remove from oven and cut into 12 equal rectangle parts.
- At 12 pieces per recipe, these come out to 2 smartpoints each.
